Coconut Bay in St Lucia unveils refurbished restaurants and facilities

The upscale Coconut Bay in St Lucia has revealed its new dining venues. During the hotel’s annual renovation closure, two of its restaurants’ kitchens were replaced. New additions to the property include the adults-only Veranda restaurant, and the hotel’s popular Coconut Walk restaurant has been given a facelift. The Splash Pool has been renovated, and the Tiki Canopy at the Splash Pool has been expanded to keep guests cool in the shade.

The Coconut Bay hotel in St Lucia has revealed its completed refurbishments. The luxury hotel has renovated its dining venues and added new kitchens to two of its restaurants.

Situated in Vieux Fort on the south coast of St Lucia, Coconut Bay is an all-inclusive hotel that caters for families and adults. The resort has the adults-only Serenity section with 36 spacious suites with private plunge pools.

Mark Adams, the CEO of Coconut Bay Beach Resort & Spa, stated:

“This year during Coconut Bay’s annual September closure we renovated and replaced two of our kitchens.”

“These improvements gave us the opportunity to upgrade our menus and add authentic new dishes.”

He added:

“We are looking forward to the feedback from our repeat guests as they enjoy all of our physical upgrades and our new menus as they are the inspiration for so many of our continued improvements, and of course we look forward to the feedback of our new guests as well.”

Refurbishments at the upscale hotel include the expansion of the top-floor kitchen of the poolside Jerk Treehouse Restaurant, which is wrapped around a large seagrape tree. New kitchens have been installed at two of the hotel’s four à la carte specialty restaurants: the creole-inspired Calabash restaurant and Silk, an Asian dining venue. Both restaurants also feature new menus along, as do the alfresco Seaside and adults-only Veranda restaurants.

The hotel’s popular Coconut Walk, which is the hotel’s main restaurant serving local, American and international cuisine has been given a facelift and now features a new lighting scheme, decorative murals and tiled columns, as well as a new modern oven to produce fresh baked bread, croissants, and Danish pastries. The Stargazers Lounge has a new tile floor and seating around the fire pit.

Additional upgrades at Coconut Bay include new awnings in premium category rooms at the family-friendly Splash wing. The zero-entry Splash Pool has been renovated, and the thatch-covered Tiki Canopy has been expanded to the Splash Bar to provide more shade more guests.

The four-star Coconut Bay Beach Resort & Spa is located on 85 acres of lush land, and has 250 air-conditioned guest rooms and suites that cater for families, groups, couple and singles. The beachfront resort has five swimming pools, a fitness centre, tennis and basketball courts, the oceanfront Kai Mer Spa and beauty salon, and a huge water park.
