“La Fonda” as well as all of their projects, was created to encourage Guanacaste culture and show their guest the importance of the kitchen in our homes as well as our traditions. The party starts with the “nisqueza” and grinding of corn to make our delicious hot tortillas served with cheese, doughnuts, “tanelas” with raw sugar, artisanal caramels made by their neighbours, empanadas stuffed with candied green papaya, homemade bread, “cajetas” and even our famous sweet squash. Enjoy the delicious dishes they make on their rustic stove and in the oven, as lush as a Guanacaste tree, all served with a delicious dripped coffee. They want their guests to feel like they are in our grandmother’s kitchen, where coffee was served on a four-legged table that our grandmothers used to wash with chigua leaves.
